For some reason I was digging through our pantry yesterday and first came across a packaged mix for Creole red beans for the crock pot. Then, after a little more digging, I found half a package of dried Jacob's Cattle beans from a Seed Savers order last fall. Finally, I found a bag of pinto beans that I'm not sure when I bought.
I haven't the slightest clue what sent me on my pantry raid, but for some reason I felt the sudden urge to cook every last one of those beans as soon as possible. My only logical hypothesis for this bean binge is that my colon is bored, looking for a challenge, and hijacked my brain's decision making center to force as many legumes down my gullet as possible over the next 72 hours.
The red beans were cooked overnight in the crock pot and have been paired with leftover rice from tonight's supper for lunch tomorrow. I took a little sample tonight and they were pretty good. The pintos are being turned into refried beans as I type. I've got the Jacob's Cattle in the crock pot cooking for whatever I decide to do with them tomorrow, perhaps baked beans.
I hope my colon appreciates the exercise. This had made for a lot of dish washing.

Guess we'll be getting some more book reviews as you will have a lot of extra reading time soon.
If only you had left one important letter out of "pantry," this would have been a very different post.
